Breakfast Casserole

  • 1 lb breakfast sausage, cooked and drained
  • 6 eggs
  • 2 cups milk
  • 1 tsp salt
  • 6 slices of white bread, buttered
  • 1 cup cheddar cheese, grated
  1. Cook and drain aaa usage, set aside. In a large bowl, beat eggs, add the milk and salt. Stir in sausage.
  2. Place bread on bottom of 11-7 baking dish. Pour mixture over bread. Cover and place in fridge 8 hours or overnight.
  3. Remove from fridge 30 mins before baking.
  4. Bake uncovered at 350 degrees for 45-60 mins covered and then uncover and cook another 30 mins at 325 degrees or until knife inserted comes out clean.

Clone of a Cinnabon

Ingredients

  • 1 cup warm milk (110 degrees F/45 degrees C)
  • 2 eggs, room temperature
  • 1/3 cup margarine, melted
  • 4 1/2 cups bread flour
  • 1 teaspoon salt
  • 1/2 cup white sugar
  • 2 1/2 teaspoons bread machine yeast

  • 1 cup brown sugar, packed
  • 2 1/2 tablespoons ground cinnamon
  • 1/3 cup butter, softened

    • 1 (3 ounce) package cream cheese, softened
    • 1/4 cup butter, softened
    • 1 1/2 cups confectioners' sugar
    • 1/2 teaspoon vanilla extract
    • 1/8 teaspoon salt

    Directions

    1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
    2. After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.
    3. Roll dough into a 16x21 inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
    4. Bake rolls in preheated oven until golden brown, about 15 minutes. While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners' sugar, vanilla extract and salt. Spread frosting on warm rolls before serving.

    *roll with rolling pin into cinnamon into dough before rolling
    *cook extra 3 mins

    Amish Oatmeal

    • 1 1/2 cups oatmeal
    • 1/4 cup sugar
    • 1/2 cup milk
    • 1/4 butter or margarine melted
    • 1 egg
    • 1 tsp. baking powder
    • dash of salt
    • 1 tsp vanilla extract
    1. Combine dry ingredients, combine wet ingredients. Then combine all ingredients.
    2. Spread in 9X9 baking dish, and cook at 350 degrees F for 25 minutes or until edges are golden brown.

    Cheerios Breakfast Cookies

    • 1 ¼ cups sugar
    • ½ Cup Butter or Margarine Softened
    • ½ Cup peanut butter
    • ¼ Cup Water
    • 1 TBSP Vanilla
    • 1 egg
    • 1 ½ Flour
    • 1 Cup Oats (old fashioned or quick cooking)
    • 1 cup raisins
    • ½ tsp salt
    • ½ tsp baking soda
    • 3 cups Cheerios Cereal

    Directions

    1. Heat oven to 375 °
    2. In large bowl, Stir together sugar, butter, Peanut Butter, Water, Vanilla, and egg. 
    3. Stir in remaining ingredients except Cereal.
    4. Gently Stir in cereal.
    5. On ungreased large Cookie sheet drop dough by rounded ¼ cupfuls 2 inches apart. You know I use parchment Paper! 
    6. Flatten dough to about 1 inch thick.
    7. Bake 10-12 minutes or until golden brown. Let stand 5 minutes before removing from cookie sheet. Store loosely covered.

    Blueberry Crumb Cake

    Topping:
    • 1/2 cup sugar
    • 1 tsp. cinnamon
    • 2 Tbsp unsalted butter, melted and cooled
    • 2 Tbsp. canola oil
    • 1/4 cup all-purpose flour
    Cake:
    • 1 1/4 cup all-purpose flour
    • 1 1/2 tsp baking powder
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 3 Tbsp. nonfat sour cream
    • 3 Tbsp unsalted butter, at room temperature
    • 3/4 cup sugar
    • 2 large eggs plus 1 large egg white
    • 1 tsp vanilla extract
    • 1/2 cup plain low-fat yogurt
    • 1 cup frozen bluberries
    1. Make topping: Combine all ingredients in a bowl. Use fingertips to blend until mixture resembles large peas. Refrigerate.
    2. Preheat oven to 350 degrees F. Coat a 9 inch round cake pan with cooking spray. Cut a 9 inch circle of parchment; place in pan. Mist with cooking spray.
    3. Make cake: In a small bowl, combine flour, baking powder, baking soda and salt. In a separate bowl, beat sour cream, butter and sugar until light and fluffy. Add eggs and egg white. Beat until frothy, about 3 minutes. Blend in vanilla and yogurt until smooth. Stir in flour mixture until just combined. Fold in berries. Spread batter evenly in pan. Sprinkle with topping.
    4. Bake cake until a toothpick inserted into center comes out clean, 50 to 55 minutes. Cool on a wire rack for 15 minutes before turning out of ban. Peel off parchment and turn cake right-side up on a rack to cool. Cut into wedges and serve.

    Delicious Cream Cheese Fruit Salad

    • 1 8 oz. package cream cheese
    • 1/4 cup white sugar, or to taste
    • 1 12 oz. container frozen whipped topping, thawed
    • 3 bananas, peeled and sliced
    • 1 can (15.25 oz.) crushed pineapple, drained
    • 1 cup (15.25 oz.) fruit cocktail, drained
    • 1 large jonagold apple, peeled and chopped
    • 1/2 cup sweetened flaked coconut
    • 1 4 oz. jar maraschino cherries, drained and halved (optional)
    • 1/2 cup chopped pecans (optional)
    • 1/2 cup golden raisins (optional)
    Beat the cream cheese and sugar together in a large bowl. On high speed, beat in the whipped topping. Fold in the bananas, pineapple, fruit cocktail, apple and coconut. If desired, mix in the maraschino cherries, pecans and raisins. Pour the salad into a serving bowl, and chill 1 hour before serving.

    Monkey Bread

    • 3 (10 oz.) packages refrgerated biscuit dough, or yeast roll dough
    • 3/4 cup white sugar
    • 3 Tbsp. ground cinnamon
    • 1/2 cup margarine
    Mix together 3/4 cup sugar and cinnamon. Melt butter. Quarter the dough with kitchen shears. Dip shears in water after each cut to keep the biscuits from getting too sticky. Dip dough pieces into butter and then into sugar mixture and place in a greased tube pan. Do this until all dough pieces are used. Pour any leftover butter and sugar mixture over the top. Bake in a preheated 350 degree F oven for 30 to 35 minutes.

    Apple Gingerbread Muffins

    • 2 cups Flour
    • ¼ cup packed brown sugar
    • 1 tsp baking soda
    • 1 tsp cinnamon
    • ½ tsp ginger
    • ½ tsp salt
    • ¼ tsp nutmeg
    • ½ cup molasses
    • ¼ cup milk
    • ¼ cup butter or margarine (melted)
    • 1 large egg
    • 2 medium apples peeled and finely chopped (about 2 cups)
    • 1/3 cup pecans

    Directions

    1. Preheat oven to 400 degrees. Grease or place liners in a muffin pan.
    2. In large bowl combine dry ingredients; Flour, sugar, baking soda, & spices. Set aside.
    3. In small bowl beat together wet ingredients; Molasses, milk melted butter, and egg.
    4. Add wet mixture to dry mixture. Stir until flour is moistened (batter will be lumpy).
    5. Gently stir in Apples and Pecans. (I could have chopped my apples smaller. I am dangerous with a knife so I decided that they were small enough:) )
    6. Spoon into prepared muffin pan. Bake until toothpick inserted in the center of muffin comes out clean, about 20 minutes.
    7. Remove immediately from pan.
    8. Makes 12 muffins…depending on size.

    Back to School French Toast

    • 2 eggs
    • 3/4 cup milk
    • Sliced Bread
    • 2 Tbsp Sugar
    • ½ tsp Cinnamon

    • Heat large skillet or griddle on stove at medium heat
    • Whisk together Eggs, Milk, sugar, and cinnamon.
    • Dip Bread in milk and Egg mix. Flip to coat both sides.
    • Place Bread on hot skillet.
    • Let cook 2 minutes each side
    • Serve with syrup or Powdered Sugar, or both.

    Use soy milk, like I did, for the dairy free version.

    Blueberry Banana Muffins


    Makes 16 muffins

    1/2 cup butter or margarine
    1 cup sugar
    2 eggs -well beaten

    1 cup mashed bananas (2-3 Bananas)

    2 cups flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 cup blueberries (frozen or fresh)

    Preheat oven to 350 degrees.

    Cream butter in mixer until soft.
    Gradually add sugar, creaming until fluffy.
    Add eggs and Bananas.
    Mix well.
    Sift flour with baking soda and salt.
    Stir into the creamed mixture.
    Let beat for about 5 minutes until it looks like this.
    Fold in Blueberries by hand so that they don’t smash.

    Place in lined muffin tins. I use an Ice Cream Scoop. You could use anything, just fill them about 2/3 way full.


    Bake for 20-25 minutes on until done.

    Apple Blueberry Oatmeal Cereal

    2 sweet apples
    ¾ cup rolled oats
    1 cup blueberries
    ½ cup almonds
    1 cup apple juice

    Cook the oats as directed on box. Chop or grind the almonds, chop the apples and combine. Add
    the blueberries. Top with a sprinkle of nutmeg, cinnamon and apple juice.

    Granola

    Granola:
    4 cups rolled oats
    1cup crushed almonds
    ½ cup whole grain flour
    1 tsp. cinnamon
    ¼ cup shredded coconut
    1 cup sunflower seeds
    ½ cup wheat germ or other whole grain bran
    ¾ – 1 cup honey
    1 cup pumpkin seeds
    Mix all together and spread out on a non-stick cookie sheet. Bake 20 min. in a 250 degree
    preheated oven. Stir and continue to bake another 20 min., stirring periodically to prevent
    burning. The granola should be lightly browned. Remove from oven and serve warm or cool
    thoroughly and store in tightlysealed container or plastic bags.

    Option: After the granola is cooled, add raisins or other organic, unsulphured dehydrated fruit.

    Apple and Oat Porridge

    4 c. water
    1 ½ c. oat bran (not oatmeal)
    1 large apple (peeled/cored/chopped into very small pieces)
    1/3 c. raisins
    ½ tsp. ground caraway seeds
    ½ tsp. cinnamon
    ½ tsp. salt

    In a 2 quart sauce pan over high heat, bring the water to a boil. Stir in the oat bran and allow
    water to return to a boil. Reduce heat to low and cook for 2 minutes, stirring often. After 2
    minutes, turn off heat. Stir in the apple, raisins and spices. Let stand until apple pieces soften –
    about 5 minutes – stirring occasionally.

    All Natural Applesauce With Cinnamon

    Peal and core apples and place in a baking dish. Place in oven at 350 degrees until apples are very tender. Mash apples up with a fork and stir in cinnamon. If you desire a sweeter taste, you can use a small amount of honey.

    Maple-Bacon Waffles

    Prep: 10 mins
    Cook: 1 hour
    Yield: 6 waffles

    • 6 slices bacon (about 6 oz.)
    • 6 Tbsp. maple syrup
    • 2 cups all-purpose four
    • 1 tsp. baking powder
    • 3/4 tsp. baking soda
    • 1/4 tsp. salt
    • 1 1/3 cups buttermilk
    • 4 Tbsp. canola oil
    • 2 large eggs
    1.) Preheat oven to 375 degrees F; line a rimmed baking sheet with parchment paper. Lay bacon on a sheet and brush both sides with 2 Tbsp. maple syrup. Bake, turning once, until crisp and browned, 20 to 25 minutes. Discard fat; lower oven temperature to 200 degrees F. Coarsely chop bacon.

    2.) In a large bowl, mix four, baking powder, baking soda and salt. n a bowl, whisk buttermilk with 2 Tbsp. canola oil, eggs and remaining maple syrup. Stir buttermilk mixture into flour mixture. Fold in bacon.

    3.) Preheat 7-inch waffle iron. Brush with a bit of oil and add 1/2 cup batter. Cook until lightly browned and crisp, 6 minutes. Place waffle on a plate in oven; cook remaining waffles. Serve with additional maple syrup, if desired.
