BBQ Pulled Pork Sandwiches

  • 4-6 lb Pork Picnic Roast
  • 1 bottle BBQ Sauce
  • 2 Cups Water
  • Hamburger Buns
  1. Place the Picnic Roast in Crock Pot preferably at night. 
  2. Add 2 cups water..
  3. Let cook on low for 8-12 hours on low, best over night.
  4. Remove bone and fat when done.
  5. Discard Liquid.
  6. Put meat back in Crock pot add BBQ Sauce.
  7. Cover and cook an additional 1 to 2 hours on High or 4 to 5 hours on low, stirring two or three times.
  8. Serve on Buns.

Soy-Marinated Pork Chops

  • 4 boneless center-cut pork chops (about 6-oz each), pounded to 1/2-inch thickness
  • 1/4 cup soy sauce
  • 2 Tbsp. rice wine vinegar
  • 2 tsp. sesame oil
  • 1 Tbsp. chopped fresh cilantro
  • 3 scallions, white and light green parts, chopped
  1. Place pork chops, soy sauce, vinegar and oil in a large ziplock bag; seal. Turn bag several times t coat pork chops with marinade; refrigerate for 15 minutes.
  2. Remove pork chops from bag; discard excess marinade. Warm a grill or grill pan to medium-high heat. Grill pork chops until cooked through, turning once, about 3 1/2 minutes per side. Transfer pork chops to a platter, sprinkle with cilantro and scallions, and serve.

Chinese Dumplings/Potstickers

pork filling

1 lb ground pork
4 large napa cabbage leaves, minced
3 stalks green onions, minced
7 shitake mushrooms, minced (if dried – rehydrated and rinsed carefully)
1/2 cup bamboo shoots, minced
1/4 cup ginger root, minced
3 tbsp soy sauce
2 tbsp sesame oil
2 tbsp corn starch

OR

shrimp filling
1/2 lb raw shrimp, peeled, deveined, and coarsely chopped
1/2 lb ground pork
3 stalks green onions, minced
1/4 cup ginger root, minced
1 cup water chestnuts, minced
1 tsp salt
3 tbsp sesame oil
2 tbsp corn starch

dough
Note: you will want to double this for the amount of filling listed – I just tend to use leftover pork filling for soup meatballs. A single batch will yield about 40 dumplings depending on size.
2 cups all-purpose flour
1/2 cup warm water
flour for worksurface

dipping sauce
2 parts soy sauce
1 part vinegar (red wine or black)
a few drops of sesame oil
chili garlic paste (optional)
minced ginger (optional)
minced garlic (optional)
minced green onion (optional)
sugar (optional)

Combine all filling ingredients in a large mixing bowl and mix thoroughly (I mix by clean hand). Cover and refrigerate until ready to use.

Make the dough, Method 1: Place the flour in the work bowl of a food processor with the dough blade. Run the processor and pour the warm water in until incorporated. Pour the contents into a sturdy bowl or onto a work surface and knead until uniform and smooth. The dough should be firm and silky to the touch and not sticky.[Note: it’s better to have a moist dough and have to incorporate more flour than to have a dry and pilling dough and have to incorporate more water).

Make the dough, Method 2 (my mom’s instructions): In a large bowl mix flour with 1/4 cup of water and stir until water is absorbed. Continue adding water one teaspoon at a time and mixing thoroughly until dough pulls away from sides of bowl. We want a firm dough that is barely sticky to the touch.

Both dough methods: Knead the dough about twenty strokes then cover with a damp towel for 15 minutes. Take the dough and form a flattened dome. Cut into strips about 1 1/2 to 2 inches wide. Shape the strips into rounded long cylinders. On a floured surface, cut the strips into 3/4 inch pieces. Press palm down on each piece to form a flat circle (you can shape the corners in with your fingers). With a rolling pin, roll out a circular wrapper from each flat disc. Take care not to roll out too thin or the dumplings will break during cooking. Leave the centers slightly thicker than the edges. Place a tablespoon of filling in the center of each wrapper and fold the dough in half, pleating the edges along one side (see images above).

To boil: Bring a large pot of water to a boil and add dumplings to pot. Boil the dumplings until they float.

To steam: Place dumplings on a single layer of napa cabbage leaves or on a well-greased surface and steam for about 6 minutes.

To pan fry (potstickers): Place dumplings in a frying pan with 2-3 tbsp of vegetable oil. Heat on high and fry for a few minutes until bottoms are golden. Add 1/2 cup water and cover. Cook until the water has boiled away and then uncover and reduce heat to medium or medium low. Let the dumplings cook for another 2 minutes then remove from heat and serve.

To freeze: Assemble dumplings on a baking sheet so they are not touching. Freeze for 20-30 minutes until dumplings are no longer soft. Place in ziploc bag and freeze for up to a couple of months. Prepare per the above instructions, but allow extra time to ensure the filling is thoroughly cooked.

To serve: Serve dumplings or potstickers hot with your choice of dipping sauce combinations.

Slow Cooker BBQ Pork Chops

  • pork chops
  • 1 bottle bbq sauce
  • 1/2-1 onion, chopped

1. Place pork chops in bottom of slow cooker.

2. Cover with onions and bbq sauce.

3. Cook on low for 4 hours.

Garlic Pork Roast

  • 1 Tbsp. vegetable oil
  • 1 (2 lb.) boneless pork roast
  • salt and pepper to taste
  • 4 sweet potatoes, quartered
  • 1 onion, quartered
  • 6 cloves garlic
  • 1 (14.5 oz.) can chicken broth
Heat oil in large skillet. Season meat with salt and pepper and brown in oil.

In a slow cooker, layer sweet potatoes, onion and garlic. Place browned roast on top of vegetables, and pour in chicken broth. Cover and cook on low setting for 6 hours.

One Skillet Creamy Chops and Rice

  • 4-6 pork chops (boneless/or bone in)
  • 2 cups regular long grain rice
  • 2 cans Cream of Mushroom Soup
  • 2 cans water
  • Salt and pepper
  • 2 tbsp. olive oil
  • 8 oz. frozen peas

Directions

Place the olive oil in a large skillet over medium heat.

Season Pork chops with salt and pepper. Cook the pork chops in the skillet for about 5 minutes per side, or until cooked through. It all depends on the size of the chops.

Remove the Pork chops from the pan and place on a plate.

Hmm....not my plate. I need to give that back to Granny.

Whisk together the 2 cans of soup and the 2 cans of water. Pour into skillet. Heat the soup mix until boiling.

So I'm not perfect. I did spill on my stove. That is what cleaner is for.

Add rice, cover and reduce heat to medium/low. Allow rice to cook for approx. 15 minutes.

Remove lid and add peas, stir. Place pork chops on top of veggies and rice. Cover and allow the food to cook for another 5 minutes.

Remove lid and Serve!

Pomegranate Citrus Pork Chops

  • 4 pork loin chops (bone in or out)
  • 1 cup orange juice
  • 2 cups pomegranate juice
  • 1 tbsp Ginger
  • 1 tbsp Garlic salt
  • 1 tbsp Onion powder
  • 1 tsp paprika
  • 1 TBSP corn starch
  • 1 Tbsp Olive Oil
  • 1 cup pomegranate arils (Seeds)

These are super easy! Not to mention delicious!

Preheat oven to 350 degrees.

Mix spices in a small bowl (ginger, garlic salt, onion powder and paprika.)
Rub spices into both sides of the pork chops.


I just sprinkled the spices directly onto the pork chops.

Place about 1 TBSP olive oil in a large skillet on medium heat.

Sear both sides of the pork chops, (About 2 minutes per side), And place in a large baking dish.


Already smelling good!

In the large skillet add 1 cup pomegranate juice and 1 cup orange juice. Heat on medium stirring up the cooked on bits of pork.

After cooking for 1 minute, remove 1 cup of the sauce and pour over pork chops.


Bake pork chops for about 20 minutes or until done depending on the thickness of the chops.

While pork chops are baking continue to cook sauce in skillet adding the remaining 1 cup pomegranate juice, and ¼ cup pomegranate arils. Stir in the corn starch to thicken the sauce. Once sauce is thick, keep on low heat until pork chops are finished.

Caramel Apple Pork Chops

  • 4-6 Boneless Pork Chops
  • 1 tsp oil
  • Salt and Pepper
  • ¼ cup Brown Sugar
  • ¼ tsp Cinnamon
  • ¼ tsp nutmeg
  • ¼ cup butter or margarine
  • 2 Cups Sliced and peeled tart apples like Granny Smith
  • 3 Tbsp Chopped Pecans

Preheat oven to 350 degrees.

In a large skillet heat oil over medium heat. Sprinkle pork chop with salt and pepper. Cook for about 2 minutes on each side just to brown the pork chop.

Place pork chops in a large baking dish.

In the same skillet add butter, sugar, cinnamon, and nutmeg. Stir until combined.

Add apples to the skillet and cook until softened about 10 minutes.

Dump apple mixture over pork chops and place in oven for 30 minutes or until internal temp of pork is 160 degrees.

You may wish to add more sauce. If so, you can make it with more brown sugar and butter in the skillet.

Serve with sauce and top with chopped pecans if desired.

Slow Cooker Pizza Pork Chops

Pork loin chops, 1 inch thick (about 2 1/4 lb)

cups cooked orzo or other pasta

Place oil in Large skillet over medium heat. Sprinkle Pork chops with salt and pepper and cook for about 4 minutes on each side.


Place pork in 3 1/2- to 4-quart slow cooker. Sprinkle onion and garlic over pork. Add pasta sauce.

Cover; cook on Low heat setting 4 to 6 hours.
Place orzo or pasta on platter. Top with pork and sauce. Sprinkle with cheese

Short Cut Brunswick Stew

  • 1½ to 2 cups BBQ Pork
  • 2 potatoes cut bite size
  • 8 oz cut okra (I had Whole Okra so I cut it)
  • 1 can creamed corn
  • 1 can diced tomatoes with onions
  • 1 medium onion diced
  • 1 Bell Pepper diced
  • 1 can tomato sauce
  • ½ cup chopped celery
  • 1 Can Lima Beans
  • 2 cups Chicken Broth
  • 1 Tbsp garlic
  • 1 Tbsp salt
  • 1 tsp pepper
  • 1 tsp oregano

  1. Turn your crockpot on low!
  2. Now….everybody in the pool!

  3. I left out the Lima Beans because my hubby says, “They make my ears itch.” The only other person I have ever heard say that in my life is my son. It is so weird!
  4. You can also substitute any kind of meat. We are using BBQ Pork because we had it left from yesterday. You could use chicken, or mix the 2.
  5. Leave in Crockpot on Low for 5-6 hours!

Cuban Sandwich

  • Yesterday’s Pork Roast sliced thin as you can by hand
  • sliced deli ham (pre-packaged is fine)
  • Swiss Cheese
  • Sandwich Pickles
  • Mustard
  • Cuban Bread
  • Mayo (optional)
  • Lettuce (optional)
  • Tomato (optional)

Slice open loaf of Cuban bread so sandwich can be made inside.
If your local store doesn’t carry Cuban Bread you could substitute French or Italian Bread.
A traditional Cuban only has mustard on the bread. I like mine with Mayo and Mustard.
Spread your choice on the bread.
Now build your sandwich.
Place the Pork, Ham, & Swiss Cheese on the inside.
Again a traditional Cuban doesn’t have lettuce and tomato, but at my house they do!
So, if you would like to add them now is the time!
Put the top on and there you have a Cold Cuban.

If you would like yours pressed, or hot (the only way my hubby likes his).
You will need a sandwich press or a hot skillet with something heavy to put on top of the sandwich, like another skillet, or a brick covered with aluminum foil.

Place some butter in the hot skillet.
Place sandwich in.
Spread butter on the top of the sandwich so it doesn’t stick to the second skillet or brick.
Let it heat until sandwich is pressed and cheese melts as desired.

Quick and Easy Cuban Style Pork Roast

  • 1 Pork Tenderloin 3-4 lbs
  • 1 Cup Orange Juice
  • 1/2 Cup Lemon Juice
  • 1 TBSP minced Garlic
  • 1 small Sweet Onion
  • 1/2 Bell Pepper
  • 2 TBSP Olive Oil
  • 1 tsp Oregano
  • 1 TBSP Garlic salt
  • 1/2 tsp black pepper
  • small orange (optional)

In a bowl mix juices, Garlic, Oregano, Olive oil, Garlic salt, & pepper.
Wisk together.
Place pork into crockpot.
Use a sharp knife to stab a few holes in the top of roast to let marinade go in.
Pour Juice mix over roast.
Chop up Onion, bell pepper, and orange and throw them in the crock pot.


Cover and cook on low for 6-8 hours or high for 4 hours.

Cider-Braised Pork Medallions

Prep: 5 mins
Cook: 18 mins
Serves: 4

  • 1 pork tenderloin (about 1 1/4 lb.)
  • 1/4 cup all-purpose flour
  • Salt and pepper
  • 2 Tbsp. unsalted butter
  • 2 Tbsp. vegetable oil
  • 3/4 cup low-sodium chicken broth
  • 3/4 cup apple cider
1.) Cut tenderloin into 8 1 1/4-inch-thick medallions. In a small bowl, combine flour, 1/2 tsp. salt and 1/4 tsp. pepper. Dredge medallions in a flour mixture and shake off any excess.

2.) In a large skillet over medium-high heat, warm butter and oil until butter melts. Cook medallions, in batches if necessary, until lightly browned, about 4 minutes per side. Remove to a platter and cover loosely with foil to keep warm.

3.) Pour off any fa remaining in skillet. Return skillet to heat and pour in broth and cider. Increase heat to high and bring to a boil. Boil rapidly stirring with a wooden spoon to pick up browned bits on bottom of skillet, until liquid is reduced by half, about 5 minutes.

4.) Return medallions to skillet, reduce heat to medium and cook, turning, until sauce is syrupy and medallions are cooked through, about 5 minutes.

Per serving: 338 Cal., 18g Fat (6g Sat.), 107mg Chol., 0g Fiber, 31g Pro., 12g Carb., 467mg Sod.

Maple-Glazed Ham Steak

Prep: 3 mins
Cook: 12 mins
Serves: 4

  • 1 fully cooked ham steak, about 1 1/4 lb.
  • 1/4 cup maple syrup
  • 2 tsp. Dijon mustard
  • 1 Tbsp. cider vinegar
1.) Preheat broiler and set rack about 3 inches from heat source. Cut ham steak into 4 portions.

2.) Stir syrup, mustard and vinegar in a small bowl to blend. Brush one side of ham steak liberally with syrup mixture and set on a foil-lined broiling pan. Broil until glaze is just speckled with golden brown spots and lightly bubbling, 5 to 7 minutes. Turn and brush other side of ham generously with syrup mixture. Broil until glaze is bubbly and speckeled with golden brown spots, above 5 minutes longer.

Per serving: 244 Cal., 9g Fat (2g Sat.), 101mg Chol., 0g Fiber, 25g Pro., 15g Carb., 1777mg Sod.

Pork Chops with Apples

Prep: 10 mins
Cook: 13 mins
Serves: 4

  • Four 1/2-inch-thick bone-in pork chops
  • Salt
  • 1/4 cup all-purpose flour
  • 3 Tbsp. vegetable oil
  • 1 shallot, finely chopped
  • 2 large Granny Smith apples, peeled, cored and diced
  • 1/2 cup apricot jam
  • 1/2 cup cider vinegar
  • 1/4 cup low sodium chicken broth
1.) Sprinkle pork chops with salt. Place flour in a shallow bowl and dredge chops on both sides.

2.) Warm 2 Tbsp. oil in a large skillet over medium-high heat. Cook chops until browned, 3 to 4 minutes on each side. Transfer to a plate and loosely cover with foil to keep warm.

3.) Add remaining 1 Tbsp. oil, shallot and apples to skillet. Cook, stirring, until softened, 2 to 3 minutes. Add jam, vinegar and broth; cook, stirring and scraping up any browned bits on bottom of skillet, until sauce has thickened, 1 to 2 minutes. Season sauce with salt, pour over chops and serve.
