Bacon Wraps

  • club crackers
  • cream cheese
  • bacon
  1. Spread cream cheese between 2 club crackers.
  2. Wrap crackers with 1/2 strip of bacon.
  3. Place wrapped crackers on cookie sheet and bake at 350 degrees until bacon is cooked (about 12-15 minutes).

Homemade Apple Bran Muffins

Makes 12 muffins

  • Vegetable oil cooking spray
  • 3/4 cup wheat bran cereal, such as All-Bran or Bran Buds
  • 1 cup skim milk
  • 2/3 cup whole wheat flour
  • Sweetener equivalent to 1/3 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground allspice
  • 1/2 tsp ground cloves
  • 1/2 cup oat bran
  • 2/3 cup raisins
  • 1 large apple, peeled and cut into 1/4 inch cubes
  • 1 omega-3 egg, lightly beaten
  • 2 tsp vegetable oil
  • 1/2 cup applesauce (unsweetened)
  1. Preheat the oven to 350 degrees F. Spray a 12 cup muffin tin with vegetable oil cooking spray.
  2. Mix he wheat bran and skim milk in a bowl and let stand.
  3. In a large bowl, mux he flour, sweetener, baking powder, baking soda, salt, allspice and cloves. Stir in the oat bran, raisins and apple.
  4. In a small bowl, combine the egg, oil and applesauce. Sir, along with the wheat bran mixture, into the dry ingredients.
  5. Spoon the batter into the prepared muffin tin. Bake until lightly browned, about 20 minutes. The muffins are done when a oothpick inserted into the center of one comes out clean. Keep the muffins in the freezer and microwave on high for about 30 seconds to warm.

Homemade Granola Bars

Makes 16 bars

  • 1 1/3 cups whole wheat flour
  • Sweetener equivalent to 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/4 cup wheat bran cereal, such as All-Bran or Bran Buds
  • 1 tsp ground cinnamon
  • 1 tsp ground allspice
  • 1/2 tsp ground ginger
  • 1/2 tsp salt (optional)
  • 1 1/2 cups large-flake , rolled, or steel-cut oats
  • 1 cup finely chopped dried apricots
  • 1/2 cup shelled sunflower seeds
  • 3/4 cup applesauce (unsweetened)
  • 1/2 cup apple juice (unsweetened)
  • 3 omega-3 eggs
  • 2 tsp vegetable oil
  1. Preheat oven to 400 degrees F
  2. Line a shallow 8 by 12 inch baking dish with parchment paper
  3. Mix the four, sweetener, baking powder, wheat bran, cinnamon, allspice, ginger, and salt, if using, in a large bowl. Stir in the oats, apricots, and sunflower seeds.
  4. In a separate bowl, mix the applesauce, apple juice, eggs, and oil together, and add to the flour mixture.
  5. Pour the batter into the prepared baking dish and spread it out evenly.
  6. Bake until lightly browned, 15 to 20 minutes. Let cool and cut into 16 bars. Keep the bars in the freezer and microwave on high for about 30 seconds to warm.

Muddy Buddies

  • 9 cups Chex Cereal
  • 6 oz Semi Sweet Chocolate Chips
  • 1/2 cup creamy Peanut Butter
  • 1 tsp Vanilla
  • 1/4 cup butter or margarine
  • 16 oz pkg of Powdered Sugar 
  1. Measure out Cereal in LARGE bowl. Use the biggest one you have!
  2. In a regular Microwave safe bowl place Chocolate chips, peanut butter, and butter.
  3. Microwave on High for 1 minute until you can stir smooth.
  4. Stir in vanilla.
  5. Pour Chocolate mix over cereal and mix until coated.
  6. Put about 2 cups powdered sugar in large ziploc bag.
  7. Add about half of the cereal mix and shake….make sure bag is sealed before you shake!
  8. Dump coated cereal on to a wax paper lined cookie sheet.
  9. You could eat immediately or refrigerate first. It does taste better cold.

Original Chex Mix

Prep Time: 15 mins
Makes: 16 servings (1/2 cup each)

  • 3 cups Corn Chex cereal
  • 3 cups Rice Chex cereal
  • 3 cups Wheat Chex cereal
  • 1 cup mixed nuts
  • 1 cup bite-size pretzels
  • 1 cup garlic-flavor bite-size bagel chips or regular-size bagel chips, broken into 1-inch pieces
  • 6 tablespoons butter or margarine
  • 2 tablespoons Worcestershire sauce
  • 1 1/2 teaspoons seasoned salt
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
1. In large microwavable bowl, mix cereals, nuts, pretzels and bagel chips; set aside. In small microwavable bowl, microwave butter uncovered on High about 40 seconds or until melted. Stir in seasonings. Pour over cereal mixture; stir until evenly coated.

2. Microwave uncovered on High 5 to 6 minutes, thoroughly stirring every 2 minutes. Spread on paper towels to cool. Store in airtight container.

Halloween Popcorn Balls

  • 6-8 cups Popcorn
  • 1 bag marshmallows
  • 2 TBSP Butter or Margarine
  • food color (optional)
  • 1/2 cup candy corn

We are going to make these just like rice crispy treats. They are even easier in the microwave!

I popped 2 bags of popcorn…lightly salted plain kind.

Then in a large Micowave safe bowl I placed the bag of marshmallows and butter. Now is when you want to add the food coloring if you want to make you popcorn ball colorful!

Microwave on High for 1 minute.

Stir and then return to the microwave in 30 second increments until the marshmallows are melted.

I have a HUGE BOWL! This is what I recommend. Get out you biggest bowl. Place the Popcorn inside. Now pour the marshmallow mixture over the corn and stir. Add the Candy Corn.

Now, butter your hands or spray them with Cooking spray. Grab handfuls of the mixture and shape them into balls. Place them on a wax paper lined cookie sheet. Store in air tight bags.

Makes about 9 popcorn balls!

Pepperoni Rolls

  • 1 cup warm water (105 ° to 115°)
  • 2 packages dry yeast or 2 TBSP dry Yeast
  • ½ cup (1 stick) melted butter
  • ½ cup sugar
  • 3 eggs
  • 1 tsp salt
  • 4-4½ cup all purpose flour
  • 1 Package sliced pepperoni (Don’t tell mom…she uses pepperoni sticks!)

  1. Combine the warm water and yeast in a large bowl. Let stand until yeast is foamy about 5 minutes.
  2. Stir in butter, sugar, eggs and salt. Mix in flour 1 cup at a time until dough is too stiff to mix. (I just use a wooden spoon and mix this by hand. Use at least the 4 cups. The dough will still be sticky but hard to mix.)
  3. Cover and refrigerate 2 hours up to 4 days (I forgot to mention you can totally make this ahead of time and toss it in the fridge)
  4. Turn the Chilled dough out on a lightly floured board or counter.
  5. I divide the dough into halves, then quarters and go from there. You can make these any size you would like. Just make sure they are uniform so they bake evenly. I got 10 rolls out of half of the dough.
  6. Work the dough with your hand on the floured surface. Flour your hands if necessary. Flatten and lay as many pepperoni as desired on top. Roll up and pinch edges shut with fingers.
  7. Place rolls on parchment lined baking sheet 1-2 inches apart because they will rise.
  8. Once baking sheet is full cover with dish towel and allow to rise for 1 hour.
  9. Preheat oven to 375° and bake for 20 minutes or until golden brown.
  10. Allow to cool. You can serve with Marinara sauce if you desire, or just eat them by themselves.

Carmel Corn Chex Mix

  • 4 Cups Microwave Popcorn
  • 4 Cups Chex (whatever you prefer, I used Corn this time)
  • 1/2 cup honey roasted peanuts (optional)
  • 1 stick butter or margarine
  • 1 cup light brown sugar
  • 1/4 cup light Karo Syrup
  • 1 tsp vanilla

  1. Preheat oven to 250 °
  2. Place Popcorn, Cereal, and nuts in a roasting pan.

  3. In small saucepan, melt butter, stir in karo syrup and brown sugar.
  4. Once melted and mixed, remove from heat and stir in vanilla.

  5. Pour Carmel over cereal mix, and stir to coat.

  6. Put in oven and let bake 45 minutes, stirring half way through.
  7. Pull out of oven and dump on waxed paper to cool.
  8. Break up and put in bowl to enjoy.

Granola

Granola:
4 cups rolled oats
1cup crushed almonds
½ cup whole grain flour
1 tsp. cinnamon
¼ cup shredded coconut
1 cup sunflower seeds
½ cup wheat germ or other whole grain bran
¾ – 1 cup honey
1 cup pumpkin seeds
Mix all together and spread out on a non-stick cookie sheet. Bake 20 min. in a 250 degree
preheated oven. Stir and continue to bake another 20 min., stirring periodically to prevent
burning. The granola should be lightly browned. Remove from oven and serve warm or cool
thoroughly and store in tightlysealed container or plastic bags.

Option: After the granola is cooled, add raisins or other organic, unsulphured dehydrated fruit.
