Fresh Vegetable Juice Cocktail

  • 8 large carrots
  • 1 stalk celery
  • 1/4 small beet
  • 1 medium tomato
  • 1 small red or green pepper
  • 1 small handful spinach or fresh parsley
The carrots and celery are basic. You may add any other vegetables, but approximately 1/2-2/3 of the juice is always carrots. Cut bitter ends off carrots. It is not necessary to pare them, Discard celery leaves. Run all vegetables through juicer.

Makes 1 large serving.

Limenade

  • 3/4 gallon water
  • 4 limes
  • 2 cups sugar
  • 1/2 cup milk
  • Lots of ice
Squeeze 4 limes. Hint: if you put them in the microwave for 45 seconds you will get more juice from them. Fill a gallon pitcher 3/4 of the way full. Add lime juice, milk sugar and lots of ice. Stir well and serve.

Fruit Tea

  • 1 cup instant tea with lemon and sugar
  • 1 12oz. can frozen lemonade
  • 1 12oz. can frozen orange juice
  • 1 large can pineapple juice
  • 1 gallon water
  • 1 quart ginger ale
Combine all ingredients in a large container, adding the ginger ale just before serving. Mix well and serve chilled. Makes 2 gallons. (Can be used as punch with crushed ice in the punchbowl.)

Fruit Smoothie

2 frozen bananas (skin removed and cut in chunks)
½ c frozen blueberries
1 c. orange juice
1 teaspoon vanilla extract (optional)

Place bananas, blueberries and orange juice in blender, puree. Use vanilla to taste. Use more or less liquid depending on the thickness you want for your smoothie.

Fruit Smoothie

1 c. apple juice
2 bananas, halved
½ to ¾ c. strawberries
¼ c. soy milk

Put all ingredients in blender. Blend for 30-40 seconds, or until desired consistency.
