Banana Bread

  • 3 cups all purpose flour
  • 1 tsp. baking soda
  • 1 cup chopped nuts, optional
  • 1 1/2 cups vegetable oil
  • 2 cups mashed ripe bananas
  • 2 tsp. vanilla
  • 8 oz. canned crushed pineapple, drained
  • 2 cups sugar
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 cup raisins
  • 3 eggs, beaten
Combine dry ingredients in large bowl, stir in nuts and set aside. In medium bowl, combine remaining ingredients, and add to the dry mixture. Stir until moist. Spoon batter into 2 3x5x9 inch loaf pans. Bake at 325 degrees for about an hour, or until toothpick inserted into center of loaves comes out clean.
