Stir Fry
- (appx.) 2 lbs chicken breast
- 1 bag frozen stir-fry vegetables
- 1/4 cup soy sauce
- 1 1/2 tsp. cornstarch
- 1 clove garlic
- 2 Tbsp. vegetable oil
- cooked white rice (as much as desired)
- Chop chicken into bite sized pieces. Mince garlic.
- Cover bottom of skillet with oil and garlic and cook until garlic just starts to brown. Add chicken and cook for about 2 minutes on medium-high.
- Pour vegetables over chicken and cover skillet. Cook for another 2 minutes.
- Stir cornstarch into soy sauce and pour mixture over contents of skillet. Cover and cook until chick is done.
- Pour over rice and serve.
