Lime-Cilantro Marinade

Serves 2 lbs chicken or pork

2/3 c. fresh lime juice
4 tsp coarsely grated lime peel
1/2 c. olive oil
8 tsp minced garlic
2/3 c. chopped fresh cilantro
3 tsp hot pepper sauce
3 tsp dried oregano
1 1/2 tsp salt
1/2 tsp ground black pepper
2 bell peppers

In large bowl, combine ingredients. Marinate at least 30 minutes. Baste with leftover marinade. Refrigerate unused marinade up to several days.
