3 medium all-purpose potatoes, peeled and finely grated
1/2 small white onion, finely grated
1/2 tsp. sea salt (optional)
In large skillet, melt butter and oil. Add carrots, potatoes and onions. Add seasoning. Saute until browned on one side. Flip over and saute on second side until browned. Break apart into small chunks, or serve in wedges cut from the round.
